Cinco De Mayo was our first full catering event. We did a salad and taquitos before but this was the first time with the entire spread!

Cinco De Mayo 🪅 was our first full catering event. Previously we've done salad and taquitos, but this was the first time with the entire spread!

What Worked

  • Taquitos, our signature item, were a perfect easy to eat snack for a happy hour event. They were the most popular part of the spread. This had us smiling, since they're what we pride ourselves on!
  • Make your own bowls were a hit! Just a few ingredients provide so many options. People were even making their own nachos, something we didn't see coming.

What We Learned

  • The catering equipment needs to be organized better so that set up and clean up are easier.
  • We don't need as much lettuce. We prepped an insane amount of lettuce (22 heads). This number was very off; we needed about 10.
  • Half pans of meat will do. We had full pans of carnitas and chicken. We refreshed the chicken once, but never had to refresh the carnitas.

Overall, it was a definite success. At first, when prepping for the event, it was overwhelming, but when the day arrived we felt confident (probably because we had already worried too much). We see future events being much more mentally manageable.
