Costs Are Down 🤠

We're now starting to look at price changes month over month. I'm not including the March 2022 vs September 2021 prices because it will not match up when everything else is month over month.

💸 Costs Update: ☀️ June 2022
Meat: We started buying our pork butts from BJs and Costco. These stores are significantly cheaper than everywhere else we went in the past. This is a win for us.

Alright, now let's look at some charts!

MoM (Month over Month) % Increase in Per Unit Cost

What is this chart is showing me?

The detail behind the chart: Prices are updated for every individual item. Once the purchase price is updated, we have a new cost for unit of measure "Per Unit".

Then, all items are grouped. We look at the % change vs the previous month for each subgroup. We gather this % change per subgroup by adding up the % change for every item in each group.

What do I see?

Up

Dairy: Our cheese and sour cream prices went up a bit, raising that dairy price. Cheese is one item we've seen go up consistently since we started.

Down

TORTILLAS!!! We finally did it 🤠. We got a cheaper price on our tortillas. After months of trying to contact the wholesale distributer we finally got them on the line. No more paying retail price. This was a big win for us, and a long time coming.

What is this chart is showing me?

What makes up the cost of this week's menu. The prices are from this month.

What do I see?

TORTILLAS!!! again haha. Good to see that percentage go down! 5% is a large decrease on what makes up the second largest portion of our menu cost.

Everything else held up pretty steady, nothing really pops out.

Cost for "Mock-up" Menu

What is this chart is showing me?

The cost of this week's menu compared to what it would cost us if we use prices from previous months.

Down again! A change in supplier for meat (June) and tortillas (July) are the two catalyst behind these drops.

Here is the % increase of the "Mock-up" Menu.

With today's prices our menu is 12% more expensive than it would have been in September.

What do I see?

Prices are downnnn, again. The short answer to why is that meat and produce prices held steady while we were able to bring our tortilla cost down.

Tortillas are a main ingredient for us and we brought the price we pay from $.29 per to $.22 per. That makes a huge difference.
