How to set up the food cart. A how to guide for future employees, or anyone interested in operation.

This is all about the trailer. No food or customer set up involved. That will be covered in another SOP.
👟Step by Step


🚨Priorities
- Propane tanks connected to gas lines at all times except when changing them out when empty. When this is done make sure both tanks are turned off.
- Trailer door and all 4 pad locks should be locked. Service table should be down.
- Chains connected, lights connect, coupler latch is secured under the ball of the hitch.
- Don't forget to get the levelers, chocks, or trailer wheel (if any were used)
- 360 Degree check.
🙈Common Problems
Problem:
Trailer not level.
Solution:
- Ideally you want it perfectly flat. But, if not perfectly flat you at least want the nose of the trailer a bit lower than the back and you want the service window side a bit higher than the door side. This makes it easier to clean the griddle and empty the steam pan.
- Use the orange levels. Should be stacked in a pyramid.
- If on a steeper incline you may need to unhitch and raise or lower the jack.
Problem:
Regulator is not turning green.
Solution:
- Check that both propane tanks are connected.
- Make sure the regulator arrow is pointed toward a propane tank and that the propane tank is full
Problem:
You smell propane.
Solution:
- A pilot light isn't lit. Check to make sure that all pilot's are lit.
- The propane might be running low. Turn griddle burners up. If the flames don't rise aggressively that means that tank is running low and you can switch the regulator to point at the other tank.
- A propane tank is not connected correctly. Turn the propane off and check that the valve are threaded correctly into both propane tanks.
📋Check List
When Leaving/Working
- Trailer is secured. Either it is still hitched to van or it is unhitched with chocks in place and on a relatively flat surface.
- Both propane tanks connected.
- Before propane is turned on, gas valve and burners in cart turned to off position.
Before Driving
- Pad locks and trailer door locked
- Gas valves, burners, propane tanks all in off position.
- Chains and lights connected, coupler latch under ball of hitch, pin secured in latch, trailer jack raise all the way up
- Wheel locks removed, chocks and levels taken.
📞 When to Call for Help
- You cannot get trailer latched correctly.
- You smell propane and cannot figure out why.
- You feel unsure about the space the trailer is supposed to be parked in.
