This post will illustrates numbers associated with the possible avenues of expansion that we have identified

🥘 Cooking

When will the cooking and prep be done?

  • meats and mixes done each week.
  • Taquitos, sauces, rubs done in bulk, maybe monthly.

How long will it take?

  • Depends on the amount of items. I think we should try to narrow down to 3 taquito flavors, 2 mixes, 2 meats, 2 sauces, 3 rubs

📦 Packaging

How and when will everything be packaged?

  • Anything thats vacuum sealed and frozen can be replenished
  • Any hot sauces should immediately be put into a mason jar (could do this and sell salsa verde)
  • Meats: after they're cooked
  • Taco Kits: Thursday and Friday before the market on Saturday or Sunday

How will the branding be done?

  • Stickers on each packaged
  • Will include item contents, pack date, best by date

How long will it take?

  • 3-4 hours

💽 Storage

Where will the finished food and packaging be stored.

  • Everything should fit in rolling fridge or home chest freezer
  • might need to get another fridge at home that is only for farmers market goods

How will items be transported?

  • placed into coolers and moved
  • some sort of dividers for the coolers would be helpful

  • Either flat on the table or standing out in front

  • Merch: stickers, shirts, hats, reusable bags (branded with some clever slogan on it) will be on front table

🍦Serve

What's this process look like?

  • Cash box for cash
  • Serve person before going to the next
  • Hand items to the customer and say something like "would love to see ya back next week"

People

Amount: 1-2

Experience: None - would be handed out product and doing transactions

Availability: flexible, Saturday mornings.

What "type" of person: outgoing, reliable, motivated, pleasant, polite.
