How much would these increase productivity? What would be better?

Could we braise our chicken in this? It would give us more capacity in our oven, which will begin becoming an issue once we add the cart as a second set up.

Open flame and large carnitas pot?
An increase in capacity as well as an effective and eye-catching cooking method for a storefront. Something like this 👇🏻

Could La Taco Carts make a large choricera?
This would be

Another eye-catcher for private events. It also could help to increase our variety. Vegetables would be easy and great on this.
Dishes
Homemade Corn Tortillas
- Need a Masa supplier
- They need to be quality. How can we do this effectively?
- Could we offer it with scarcity? Like pop-ups with homemade tortillas only certain days.
- The tortillas would need to be noticeably better than the one's that we purchase
Nopal
- A nice vegetarian option. Would it be possible to find a good cactus supplier. If so would this be worth it?
- Better hot or cold?
Suadero
- A great and unique taco option. More on this below
Barbacoa

New Ingredients
- Dried peppers
- Lard for carnitas.
- Oaxaca cheese
- Suadero (flank steak or ask lansdale meats or tussock sedge if they have the cut?
- Bones for beef stock? Or use butt bones
Miscellaneous Thoughts
Need something eye catching for storefront. Can be both a cooking method and a food item. These also could be eye catching for private events. Would any of the above do?
