👟Step by Step
Here's two tables of what get's done on which day and in which order. We will just be focused on the prep day for this SOP.
The table on the left shows the tasks as a whole. The table on the right shows specific ingredients and quantities, what they are for, and how they need to be prep.


After the purchasing is completed we get to the kitchen and begin preparing for the main cook day. I will list all prep activities for each person. Specific recipes can be found in the Recipe file.
Set Up
- After arriving to the kitchen, unload everything.
- Next, refrigerate everything that needs it and clear out anything from the fridge that is past date.
- Make sure that everything is properly label (with the contents and date).
- Set up your prep station.
- Shapen knives
- Wash your hands
- Begin prep
Prep Station
Person 1 (produce)
- Cutting board
- Small scale
- Side prep table
- Knife
- Trash Can
- Necessary Containers and bowls
Person 2 (meats)
- Cutting board
- Large scale
- Knife
- Trash can
- Necessary Containers and bowls
- Immersion blender
Prep Activities (in order)
Person 1
- Boil guajillo chiles for wet rub.
- Halve and peel onions. (properly separate into containers for carnitas, ranchero and al pastor). Label and refrigerate
- Stem and seed Ranchero sauce jalapeños
- Measure out tomatoes, white onion, garlic, and jalapeno for ranchero sauce. Place into a bowl for Person 2.
- Chop poblano peppers (properly separate into containers for chorizo and al pastor). Label and refrigerate
- Drain guajillos, put into large container with remaining ingredients, and blend using immersion blender.
- Prep, core, and chop pineapple Label and refrigerate
- Juice limes Label and refrigerate
- Peel and wash tomatillos. Put into container. Label and refrigerate
- Wash & pat dry cilantro. Put into container. Label and refrigerate
Person 2
- Cut chicken into cubes and move into container
- Mix dry rub and wet rub
- Marinate the chicken in batches, move to container, label container and move to fridge. Label and refrigerate
- Put Ranchero Sauce on
- Slice pork butts for Al Pastor
- Drain ranchero sauce
- Marinate Al Pastor and Chorizo. Place into container then Label and refrigerate
- Put drained ranchero sauce ingredients into a large container with remaining ingredients, and blend using immersion blender. Place into a container then Label and refrigerate
🚨Priorities
- Clear out anything old from the fridge.
- Gets meats into the fridge.
- Cut and marinate meats
- Make a note of anything you notice we are low on (spices, paper towels, latex gloves, etc.)
🙈Common Problems
Problem:
Short/missing an ingredient.
Solution:
- Can you omit it or substitute something?
- Run out and get it by somewhere near by.
Problem:
Food is bad
Solution:
- Throw it out
- Call
- Buy more.

You have...
- All ingredients you need.

- The refrigerators are at temperature.
📞 When to Call for Help
- Refrigerator not at temperature
- An ingredient is missing and you don't know if you can subtitute it.
- Food is bad
