💸 Costs Update: ☀️ June 2022

Meat: We started buying our pork butts from BJs and Costco. These stores are significantly cheaper than everywhere else we went in the past. This is a win for us.

💸 Costs Update: ☀️ June 2022

Costs Are Down 🤠

We're now starting to look at price changes month over month. I'm not including the March 2022 vs September 2021 prices because it will not match up when everything else is month over month.

If you want to see the prices changes from Apr 2022 to May 2022 you can look at them here 👇🏻

💸 Prices Update: 🌷May 2022
Where our food prices stand as of today. Charts included for visualization.

Alright, now let's look at some charts!

MoM (Month over Month) % Increase in Per Unit Cost

What is this chart is showing me?

The detail behind the chart: Prices are updated for every individual item. Once the purchase price is updated, we have a new cost for unit of measure "Per Unit".

Then, all items are grouped. We look at the % change vs the previous month for each subgroup. We gather this % change per subgroup by adding up the % change for every item in each group.

What do I see?

Up

🤠 Not Much

Down

Produce: We've added tacos and (🌮 = bulk cilantro🌿 & bulk limes 🍋). This shows a big % change, isn't that large of a change in the scheme of things.

Tortillas: With that shift to tacos we started buying corn tortillas in large quantities reducing the cost. This shows as a decent % change, but it's not much compared to the overall menu cost as we sell way more taquitos than tacos.

Meat: We started buying our pork butts from BJs and Costco. These stores are significantly cheaper than everywhere else we went in the past. This is a win for us.

May Cost Make-up of Weekly Menu

What is this chart is showing me?

What makes up the cost of this week's menu. The prices are from this month.

What do I see?

Not too much has changed. It's good to see the meat and tortilla costs come down a bit.

but...Tortillas still are taking up a large chunk...

But I think by next month they'll be down a bit. It sounds ilke we're going to be able to work something out that drops our cost per unit from $.28 to $.21 for our taquito tortillas.

Cost for "Mock-up" Menu

What is this chart is showing me?

The cost of this week's menu compared to what it would cost us if we use prices from previous months.

Finally down! Looks like we almost came down to our price levels in April. Most of this change is due to new supplies and buying in bulk.

For items that we didn't change our purchase quantity or our supplier the costs were slightly up across the board.

Here is the % increase of the "Mock-up" Menu. With today's prices our menu is 20% more expensive than it would have been in September.

What do I see?

Prices are downnnn, finally. Mainly they held steady but we found some better suppliers so they went down for us.

Would love some better ways to look at prices. If you're reading this and have useful ratios or charts I can try out, I'd love to hear from you!
