Prices Are Up :(
We're now starting to look at price changes month over month. I'm not including the March 2022 vs September 2021 prices because it will not match up when everything else is month over month.

Alright, now let's look at some charts!
MoM (Month over Month) % Increase in Per Unit Cost
What is this chart is showing me?
The detail behind the chart: Prices are updated for every individual item. Once the purchase price is updated, we have a new cost for unit of measure "Per Unit".
Then, all items are grouped. We look at the % change vs the previous month for each subgroup. We gather this % change per subgroup by adding up the % change for every item in each group.

What do I see?
Up
Meat: Again 😡. This was our update last month 👇🏻
After no price increase in our chicken over 6 months, it jumped 10% this morning. At 8% meat isn't the top mover but as you'll see below our meat makes up 38% of the total cost of our menu, so it increasing hurts us more than increases in dairy or sauces.
So yeah, not good. Up more than 30% in the last two months. Our chicken increased 36% and our pork went up 10%.
Chicken was $1.99 per pound, then jumped to $2.19 per pound last month, and now $2.99 per pound this month.
We're going to shop around to see if we can get a better price, but we are afraid this might just be a pill we need to swallow. We see the gas prices shooting up and we are aware that affects every industry.
Down
Produce: We're getting even busier so our types of produce that we're able to buy in bulk has increased, lowering prices even further for us. A definite win.
April Cost Make-up of Weekly Menu
What is this chart is showing me?
What makes up the cost of this week's menu. The prices are from this month.

What do I see?
Meat now makes up 44% of our menu cost.
We're going to need to start thinking about our prices again. We have increased them once, about 5 weeks ago, but we might have to do it again. If this trend steep trend up doesn't at least flatten out, we may be forced to up things on our end to keep pace.
Tortillas still are taking up a large chunk.
We still have not found cheaper tortillas that are up to our standards, hopefully that changes soon.

What is this chart is showing me?
The cost of this week's menu compared to what it would cost us if we use prices from previous months.

Here is the % increase of the "Mock-up" Menu. With today's prices our menu is almost 30% more expensive than it would have been in September.

What do I see?

Prices are going up haha. pretty simple
