    👟Step by Step

    Register

    1. Move everything from the window into it's box
    2. Put the menu away.
    3. Move the cashbox, POS, and tip jar into the van.
    4. Put steam pans back into food warmer, put lids and utensils into bin
    5. Put steam table connectors into hot water of the steam table to loosen grime
    6. Hook up the hose and drain the steam table (make sure to close the valve back up once drained)
    7. Wipe off connectors with a towel
    8. Wipe down your area
    9. Make sure everything is secure on the shelves above.
    10. Sweep the trailer floor and pack up the trash.
    11. Turn off the fridge light, main light, and fan.
    12. Turn off the generators, wind up the cords, put the cords and generators away.
    13. Hitch the trailer back up if need be.

    Griddle

    1. Close the propane tanks (and lock the compartment), close the main valve, turn off the burners
    2. While waiting for griddle to cool to 300 degrees
    3. Put caps back on toothpicks
    4. Move the tortillas into the van.
    5. Dump the egg whites down a drain or into grass
    6. Ready the fridge and cold table for travel
    7. Clean the griddle (full steps in blog below)

    So you want to be the person operating the grill, making the most delicious taquitos and tacos imaginable? Well it’s all not all sunshine and rainbows, there’s some dirty work involved. Sweat and grease goes into this job.

    8. Once the griddle is cleaned, wipe down the area.

    9. Sweep the floor of the trailer

    10. Pick up the levelers if they were used.


    🚨Priorities

    1. Turn off gas and burners
    2. Secure everything in cold table/fridge
    3. Drain steam table
    4. Go over trailer pack up
