The inception of the idea came about when making tacos for family.

We have had to turn down so many small events because it doesn't make financial sense. We figure other food trucks are doing the same. We want to capitalize on this gap in the market, and we just think it'll be fun.

What is it

  • Made to order tacos and taquitos for groups of 20-40. We're thinking small private parties and small team corporate lunches. We think people like small cutesy personal set ups
  • No longer than an hour serve time (charged per hour after first hour). We'd love to stay for the entire party, we'll just charge for our time after the first hour.

We are looking to...

  • Give ourselves another revenue stream during the winter months
  • Provide a more intimate experience for customers so they become more familiar with what TUCKEDito is about.
  • Have a catering option with a lower minimum
  • Have fun

Why will this be good for us?

  • One man can operate so it can scale easily (1 person to operate, 1 standard sedan needed)
  • Can easily do multiple events in a day
  • No need for a large vehicle to transport the equipment (Let's think pizza delivery but instead of just delivering cooked food we will be delivering the entire cooking experience)
  • Increase brand awareness

What We're looking for in a set up

We're going to LA Taco Carts for our cart for this. They built our first one for our tent set-up and did a phenomenal job.

I called Mike, from LA Taco Carts, a few weeks ago, asking about electric griddles and he sent me this 👇🏻

This is something else he recently built. This got the ideas flowing for us.


We just sent him this email 👇🏻

We are looking for a cart that can be used inside for private parties. We are hoping for something that can be transported and assembled by 1 person in a regular 4 door sedan.

Not sure if all this will be possible, but these are the specs we are thinking about:

  • 24x12 electric griddle with back splash
  • Detachable legs
  • Detachable Front prep table
  • Hot side, full size steam pan (can this be detachable and electric?)
  • Detachable Side cold table
  • Small Area just behind of griddle table to put stuff (thinking 24x4 which would be length of the griddle and then just 4 inches deep)
  • Sneeze guard/serving table (below eye level)

We'll see where it goes from here. Hopefully will have an update to this blog post in the coming weeks. Until then, we'll continue to roll taquitos 🤠🤙🏻
