What do we think about on a weekly basis? Wellllll... it changes each every week, so that keeps it interesting, even worth a weekly blog post to me.

What do we go through on a weekly basis? Well ... it changes each every week, so that's what makes it interesting, and therefore, "bloggable" in my mind.

🏜 NOBODY likes dry rice!

We mentioned before that we're beginning to offer sides. One of them is rice, cilantro lime rice to be specific. We will need to hold the rice at a temperature of 140 degrees the entire time we are on site and I am worried the rice will dry out.

I hate dry rice, you hate dry rice, your aunt hates dry rice.

Soo what are we going to do? Well we're just going to pop some rice in the rice cooker and leave it on the warm setting and see how long it takes to dry out.

I'm thinking maybe we'll need to have two rice cookers on site. One we'll make the rice in, then transfer it to the other keep warm, then when that runs out we'll make some rice again.

It's a pepper and jam combo. The result is a spicy sweet sauce with a silky thick texture. It's a unique flavor, one that we're excited about!

Manayunk StrEAT Food Festival challenges vendors to use strawberries in one offering. Our answer to the challenge is Strawberry Chamoy.

We are going to mix our sauce with our carnitas and possibly toasted coconut.

We're jarring our rub and our pepper sauce. We need catchy labels for both! Here are two that I made. We're going to dwell on them for a bit and see if we're still feeling them
