We’ve got our biggest event ever coming up. We’re catering a Cinco De Mayo party for a media company with 300 employees.

What do we go through on a weekly basis? Well ... it changes each every week, so that's what makes it interesting, and therefore, "bloggable" in my mind.

Kitchen

Maximizing refrigerator space.

We don't have a walk in refrigerator. So, maximizing the three refrigerators we have is crucial.

Some methods we're trying to maximize

  • Juicing all of the limes: Juice takes up much less space than whole limes
  • Prepping vegetables immediately: Like juiced limes, chopped tomatoes take up less space than whole tomatoes.
  • No air in containers! We need to find the right sized containers for everything. 1 quart of sauce cannot be in a 4 quart container. Air is wasted space!
