🤔 What are We Thinking? Week 19, 2022 🧐
This is the week. We've got our plan and now we're hitting the kitchen with it. Most of our time this week will be prepping food and equipment for our first large catering event!

🤨 💭 Decisions, Decisions, Decisions
What do we go through on a weekly basis? Well ... it changes each every week, so that's what makes it interesting, and therefore, "bloggable" in my mind.
Kitchen

👶🏻 New this Week
Maximizing refrigerator space.
We don't have a walk in refrigerator. So, maximizing the three refrigerators we have is crucial.
Some methods we're trying to maximize
- Juicing all of the limes: Juice takes up much less space than whole limes
- Prepping vegetables immediately: Like juiced limes, chopped tomatoes take up less space than whole tomatoes.
- No air in containers! We need to find the right sized containers for everything. 1 quart of sauce cannot be in a 4 quart container. Air is wasted space!

VTO Monthly Update
This comes from the book Traction. We think it's a productive way to orient our business. Sometimes you get caught in the weeds and lose track of the big picture.
Every quarter we update our goals and vision for TUCKEDito. Then monthly we review those goals. This is our way to take a breath and focus on what's important.
Until Next Time...
Make sure you check out future posts! If we come to any decisions we will include the how, why, and what for!
