What do we do on a weekly basis? Well ... it changes each every week.

Outside of the usually bookkeeping, social updates, scheduling, cooking, and serving, here is what we worked on.

Kitchen

New Sauces

Fire roasted salsa verde - featuring Anaheim peppers for a little less heat compared to jalapenos

Pepper Sauce - Looking for a mild sauce that is thin enough to dress up tacos nicely. The main ingredients in this are anaheim peppers, ancho peppers, and onions. All ingredients were toasted, roasted, or pan fried prior to blending.

*both sauces are pictured on the tacos below.

Chorizo

For this chorizo I bought ground pork from Lansdale meats. I hand mixed the ground pork with my own chorizo wet rub mixture. (i have visions of getting a meat grinder and grinding down pork shoulders ourselves.)

Want to do some more experimenting with new meats, birria will be next.
